Abstract

This paper presents a wavelet based technique for monitoring pulsed electric field (PEF) applied for food processing. The proposed technique applied on laboratory data shows the ability to monitor the changes in the features of the applied pulses before and during flashover events. The occurrence of flashover in liquid food during PEF process has several side effects. Compared to the classical FFT, wavelet can be used effectively to predict the closeness of a flashover event. This technique can be used as an integral part to monitor the quality control of the PEF process.
