Novel Insights into Food Ingredients and Additives with Food Analytics: A Case Study Analysis of European Packaged Foods with Pulse Ingredients

Abstract

This study examines European packaged foods, particularly focusing on pulse ingredients and additives coded by the EU, through food analytics. We employ an approach that combines various descriptive analytical techniques, which include multi-dimensional scaling (MDS) and data visualization. The data utilized in the research originated from a previously conducted study; however, extensive data cleaning and transformation were still needed to facilitate the analysis. Furthermore, novel types of insights were obtained for the selected foodomics dataset. Throughout the study, multiple new derived databases were created, which are described in the paper and the Supplement Document as reference for future studies in food analytics. The study aims to guide the development of healthier food products that consumers and food industry stakeholders may find appealing.
